Black Beans and Rice



Ingredients:
1 cup onion, chopped fine (about 1 medium)
1 cup green bell pepper, chopped fine (1 whole)
1 cup red bell pepper, chopped fine (1 cup)
1 tablespoon garlic, minced
1/4 cup lime juice, or white wine vinegar or OJ
1 1/2 teaspoons hot sauce
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 cup cilantro
1 can Orgo diced tomatoes, no salt
2 cans Black bean, Organic, can, drained & rinsed
2 cups brown rice, cooked

Directions:
1. In a large deep skillet over medium heat; saute onions, garlic & bell peppers about 10 minutes.

2. Add beans, spices, hot sauce & lime juice; bring to a boil. Cover, reduce heat & simmer 10 minutes.

3. Remove from heat & add cilantro & rice; mix well.

Per Serving : 200 Calories; 1g Fat (2.8% calories from fat); 10g Protein; 39g Carbohydrate; 7g Dietary Fiber; 0mg Cholesterol; 114mg Sodium.
Exchanges: 1 Grain(Starch); 0 Lean Meat; 1 Vegetable; 0 Fruit; 0 Fat.
